This blend was built around the crazy idea of combining two types of rum production, French and English.
Our Cellar Master subtly took advantage of the rich flavors of the "pure cane juice" White Rum of the French West Indies which is distilled in Column, and married them with two Molasses Rums of Barbados;
a White Rum distilled in Column and a Rum resulting from a double distillation of Alambic and Column aged 3 years and aged in American Oak Ex-Bourbon.
Origins
The French West Indies are famous for producing exceptional rums from freshly pressed cane juice.
Barbados is equally well known for producing high quality molasses-based rums using double distilled, Alambic and Colonne blends.
Tasting Note
APPEARANCE - Very clear with straw color yet still very limpid.
IN THE NOSE - Smooth and warm with hints of dried banana, vanilla, and melted caramel. This blend: the pure rum from the French West Indies brings a very strong note of sugar cane, lemon and pepper; and the rum from Barbados gives it a note of licorice and leather. Nose indeed very rich on this woody bourbon.
IN THE MOUTH - After a rather suave and lively attack, the very balanced body develops a wide aromatic palette: butterscotch, vanilla, enhanced by a small spicy touch. The whole is quite mellow, almost sweet on the sugar cane, heading languidly towards a barely woody finish. Nice balance with an English style entry, a French style mid-palate and a finish with a nice mix of the two.
